I mostly work with laser cutting machines, though there are lots of other ways to alter the shape of sheet or plate materials.

general kinds of laser cutting machines
Laser cutting machines generally use a focussed laser beam to heat a small area on the material to be cut. A jet of gas (often Oxygen) blows the molten material out the back side of the cut. Once you arrange some reletive motion between the laser beam and the material, you are cutting.
